NPCs are gonna take a long time, at least a year.They divided NPC content in 3 parts (Build 43, build 45 and build 47) They will be adding other builds in between where the improve the game much more. Animals NPC are the first part and that is already a huge addition. So it is too early to know how humans NPCs will work in this game.
That said, if you go into the Steam properties for the game > beta, you can just roll back to an earlier version of the game. So you will be able to continue on that save even after the update has released.
