Never happened to me. Have currently > 6000 star metal bars. Play at official server. I would say, if they don't break from 1 max 2 explosive arrows / demon fire orbs, then they are bugged and you should not waste more time and resources trying. I personally use explosive arrows and aim at the base.

You can get star metal ore from killing frost giants, if you're still stuck. Otherwise, using the Slomo 1000 command will speed time up a ton. You can wait around 5-10 minutes like this until you see the meteor storm crash by, then use slomo 1 to get it back to normal speed and go harvest.
